Plantain Nachos

Ingredients
- 2 ripe plantains
- 1 tbsp olive oil
- Salt
- Shredded cheese
- Diced tomatoes, onions, and jalapeños
- Sour cream or yogurt for topping
Instructions
- Slice plantains thinly and toss with olive oil and salt.
- Bake at 180°C (350°F) for 15–20 mins until crispy.
- Top with cheese and diced toppings.
- Bake 5 more minutes. Serve with a dollop of sour cream.
