Plantain Cinnamon ROlls

  1. Peel the plantain and slice it lengthwise into very thin, flat strips.
  2. Lightly fry the strips in a little butter until soft and flexible (not crispy).
  3. Mix sugar (or honey) with cinnamon in a small bowl.
  4. Spread a thin layer of the cinnamon mix over each warm plantain strip.
  5. Gently roll each strip like a cinnamon roll and secure with a toothpick if needed.
  6. Let cool slightly and enjoy warm!
