Plantain Egg Cups
Ingredients

1 ripe plantain

2 Eggs

A pinch of salt

A pinch of pepper
- Oil for greasing
Instructions

Preheat your oven to 180°C (350°F).

Slice the plantain into thin rounds.

Lightly grease muffin cups with oil and press the plantain slices into the bottom to form a base.

Crack an egg into each muffin cup over the plantain base.

Sprinkle a pinch of salt and pepper on each.

Bake for 12–15 minutes, or until the eggs are set to your liking.

Let them cool slightly before carefully removing from the muffin tin.
